Tomato and pepper Orzo
Ingredients:
- 30g orzo pasta
- 1 tbsp olive oil
- 1/2 onion, chopped
- 1/2 red pepper
- 1/2 garlic clove
- 100g chopped tomatoes
- 50ml vegetable stock
- 15g cheese
Method:
- Crush the garlic clove, de-seed and dice the pepper.
- In a pan heat the oil. Add the onions and red pepper and fry for 4-5 minutes.
- Add in the garlic and fry for 30 seconds, then add in the tomato, the stock and the orzo and simmer for 15 minutes (or until the orzo is cooked - you may need to add some more water if necessary).
- Once cooked remove off the heat and stir in the cheese.
