Tomato and pepper Orzo


  • 30g orzo pasta
  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 1/2 red pepper
  • 1/2 garlic clove
  • 100g chopped tomatoes
  • 50ml vegetable stock
  • 15g cheese


  • Crush the garlic clove, de-seed and dice the pepper.
  • In a pan heat the oil. Add the onions and red pepper and fry for 4-5 minutes.
  • Add in the garlic and fry for 30 seconds, then add in the tomato, the stock and the orzo and simmer for 15 minutes (or until the orzo is cooked - you may need to add some more water if necessary). 
  • Once cooked remove off the heat and stir in the cheese.
